Pumpkin Clam Chowder

Pumpkin Clam Chowder is a light, healthy and delicious soup that can be served at any time. It also contains ingredients that are known to help with gut healing process. This is a delicious and healthy soup recipe that is perfect for you!

Ingredients:
-6 oz bacon, diced
-1 cup chopped onion
-1 cup chopped celery
-1 leek, cleaned and sliced
-1 lb carrots, peeled and chunked
- 4-6.5 oz canned clams
-1-8 oz bottle clam broth
-1 bay leaf
-1 tsp thyme
-2-15 oz canned pumpkin
-1-14 oz canned coconut milk
-1-2 tsp salt


Directions:
Crisp the bacon and sauté all the veggies together. Add all ingredients (including the bacon) to the crockpot and cook on low for 4 hours. Remove bay leaf, salt if necessary, and serve.
